Unico Zelo, Pastafarian 2021

Unico Zelo was founded by husband-wife team, Brendan & Laura Carter, two winemakers who wanted to shine a spotlight on the incredible soil, terroir and potential of cool-climate Australian wine. They have vineyards throughout the Adelaide Hills, and are making some of Australia's best and downright coolest wines we've seen in a while. Designed to be the pasta wine to end all pasta wines, Pastafarian 2021 is made from a super interesting blend of some of our favourite red varieties: 44% Nebbiolo, 39% Sangiovese, 13% Merlot, and 4% Nero d'Avola; all taken from plantings across the Adelaide Hills and Clare Valley in South Australia. The grapes were harvested and spent a little time in Slovenian oak to mellow out some of the bigger tannins. A nose of sour cherry, raspberry, redcurrant and rose leads to a structured, yet rounded, palate with further red fruit flavours along with some spice. Almost goes without saying, but red sauce pasta is the go-to for this one.
